Still dry cider made from 80% Harry Masters Jersey, a beautiful bittersweet variety we picked from the extensive orchards at Ross on Wye. Blended with a 20% mix of sharp and bittersharp Cornish fruit for a dash of acidity. Fermented and aged in ex pinot noir barrels for 10 months.
